300ml liquid (any taste)
3g Iota carrageenan
1.5g agar
50g egg white
150ml any plant based oil
salt
Mix agar, iota, liquid with a hand blender, cook it up once, blend in egg white and slowly pour the oil in a thin stream. Fill it in a isi whipper. Done.
The foam will stuck after 1-2 minutes.
We take as liquid a mushroom broth and the oil is almonds oil.

Butter vinegar jelly.
Does not split.
recipe:
300g vinegar any flavour
150g butter
2g Agar
2 leaves (4g) gelatine
salt
Cook vinegar, butter, agar, salt to a sirup consistency add the water soaked gelatine,
pour on a tray, chill, cut, reheat.
