Lamb is, at least in my opinion, a superior meat. Beef is good and all, so is chicken and fish, but lamb brings flavor to the table.

Any recipes planned? I'd love to get good at lamb.

They're definitely 🐻, specifically polar 🐻 And the restaurant I was at for a decade made lamb the best I've ever had. They did it over fire so not sure I can help you too much there (other than: maybe give 'em some smoked salt), but serving them over a hazelnut and almond romesco made with garlic and roasted red peppers and topped with some lightly dressed arugula was something I didn't appreciate enough until it wasn't in my life on a weekly basis. The sort of thing that makes one almost want to go back into food service. Almost.
