Crunchy beef phyllo triangles

Crunchy on the outside, juicy on the inside, with complex Moroccan-ish flavors. Good with yogurt. Meal prepper? Freeze them unbaked, then put a frozen one directly in the air fryer or hot oven.

Ingredients

  • Lots of butter
  • 2 onions, finely chopped
  • 1 kg ground beef
  • 2 tsp paprika
  • 2 tsp cinnamon
  • 1 tsp ground black pepper
  • 1 tsp ground nutmeg
  • 1 tsp or less chili powder
  • 1 tsp ground allspice
  • 1 500-gr package of phyllo sheets (кори in Bulgaria) -- about 12 sheets

Directions

  1. Saute the onion in about 30g of butter. Add the beef and brown it.
  2. Add the spices and simmer for a while.
  3. If there's more than a little oil, strain the beef. Optionally, also zap it with an immersion blender to make a finer, smoother mix.
  4. Melt a fair amount of butter, such as 50 gr.
  5. Spread out one phyllo sheet in portrait mode (taller than it is wide). Drizzle butter on it.
  6. From the left edge, fold in one third of the sheet. Then fold in one third from the right. Now you have a narrower sheet of phyllo.
  7. Drizzle the sheet with more melted butter.
  8. Near the bottom edge of the phyllo sheet, put a big spoonful of the beef mixture.
  9. Pick up the lower right corner of the sheet and fold it up to meet the left edge, making a triangle with the beef inside.
  10. Fold that triangle up, aligning its edge with the edge of the phyllo.
  11. Keep folding the triangle up until you reach the end of the phyllo.
  12. Paint the whole thing with more melted butter and set it aside.
  13. Repeat with more phyllo and beef until you run out of ingredients. You should get about 11 triangles.
  14. If you want to freeze them for baking one at a time later, freeze them now. Later, you can pull out a frozen triangle and put it directly in the air fryer (190 C for 25 minutes or so).
  15. If you want to bake one now: air fryer at 190 C for about 18 minutes; conventional oven might be 180 C for 30 minutes..
