A one room a-frame cottage with two stories, alternatively a medieval type cruck frame, leaving the bark on the internal timber (tricky but doable if you have the right timber at hand). A carved oak or beech round window frame, a slate clad stone or brick fireplace with cut slate- or sand-stone surround. Solid oak floor, clay plaster walls. Rather than scattered oat or wheat straw I'd go for woven rush mats. I assume the roof is covered in slate.
