Anyone on this here Fediverse got some favourite "Mexican" (or otherwise TexMex or South American generally) recipes for pumpkin (*edit: aka winter squash, sorry I forget my En.Au language barrier sometimes - I mean firm, sweet, orange fleshed autumn/winter hard "squash" - to me a "squash" is a lemon drink lol - photo incoming in a few mins*) - especially something that's a good side/companion to a chunky chilli con carne.
I like growing pumpkins, and now we have a few, but I must admit my pumpkin repertoire is a tad limited: roast pumpkin, Thai spiced pumpkin soup, and pumpkin scones.
