When I cut chicken apart, I bake the skelet and skin from breasts before they go to broth, to upgrade the taste - Maillard reaction takes otherwise forever from just cooking.
Now look at it, it's crunchy, but still fatty enough to not be dry. It'll never reach the pot.π»
