Corned Beef is onsale this week for St. Patrick's Day. I skip the Potatoes to reduce carbs. Then for leftovers the next day, I make a sandwich for Lunch or Corned Beef Hash & Eggs for Breakfast. The leftovers are better than the main meal, so I usually eat light on the main meal so I can have more leftovers. image
